Dill: Dill is a seed spice crop and an important aromatic herb, native to South-West Asia or South-East Europe and cultivated since ancient times. There are two closely related cultivated species of dill, i.e. European dill (Anethum graveolens) and Indian dill (A. sowa). Beyond its use as a pickling spice, dill weed has a natural affinity for zucchini and summer squash, asparagus, and spinach. It complements cold-water fish such as herring and salmon and makes a notable appearance in recipes for borscht.
